Traditional Christmas cake is very moist cake loaded with juicy dry fruits and nuts. Fruits need to be soaked in wine or rum or brandy or whisky properly for one month or upto a year to make it juicy.
Nuts we can add in the batter at the time of baking.
Ingredients
1) Red Wine/Rum/ Brandy/Whiskey – 1 cup
2) Honey – 3 tbsp
3) Mixed fruit Jam/ black current jam – 2 tbsp
4) Spices :
cardamom 10
Cloves 10
Cinnamon 1 stick
nut Meg 1
5)Dry fruits:
Kiwi – 50 gm
Dates – 100 gm
Golden raisins – 100gm
Black raisins – 100gm
Tutti frutti – 100 gm
Fig – 100gm
Blackberry – 50 gm
Glazed cherry – 50 gm
Dried pineapple – 50 gm
(dried Orange peel, dried ginger candy,apricot,prunes,craneberry, raspberry are optional)
